Manzanilla Cacereña Extra Virgin Olive Oil is the juice of olives Manzanilla cacereña variety olives, collected in the Region of the Sierra de Gata, in the northwest of the province of Cáceres. In this area, we collect only those fruits that bring together the properties that we consider fundamental to obtain high quality Extra Virgin Olive Oil .It’s made an early harvest of olives with which we can produce a higher quality EVOO and thus ensure the conservation of its organoleptic properties.
Only through this system of selection, we can guarantee to our clients an Extra Virgin of which we are completely sure as far as quality.
Manzanilla Cacereña is the most outstanding variety of the DOP Gata-Hurdes and is mainly and almost exclusively in the North of Cáceres.
This EVOO is 100% Manzanilla Cacereña olives, creating one of the best EVOO given its high oleic acid content of 78-80% compared to other EVOO, which concentrate between 55% and 80%.
On the other hand, it offers a very balanced flavor between spicy, sweet and bitter.
And given the characteristics of this variety of olives, which have little fat yield to produce oil, its process is facing a higher cost compared to other varieties.
Manzanilla Cacereña EVOO, besides being the most identifiable EVOO of the North of Extremadura, is a versatile variety, ideal for all types of culinary preparations.
